Instructions
- Preheat your oven to 350°F (175°C) and line a 10×15-inch jelly roll pan with parchment paper.
- In a medium bowl, whisk together flour, cocoa powder, baking powder, and salt.
- In a separate large bowl, beat eggs and sugar until thick and pale. Add vanilla and milk, mixing gently.
- Fold the dry ingredients into the wet mixture until smooth, then pour the batter into the prepared pan.
- Bake for 10-12 minutes, until the cake springs back when touched.
- While warm, turn the cake onto a clean kitchen towel dusted with powdered sugar. Roll the cake with the towel inside and let it cool.
- To make the filling, beat peanut butter, butter, powdered sugar, and heavy cream until fluffy.
- Unroll the cooled cake, spread the peanut butter filling evenly, and roll the cake back up tightly.
- Top with chopped Reese’s Peanut Butter Cups and drizzle with chocolate ganache if desired.
- For clean slices, refrigerate the cake for 1 hour before serving.
