Instructions

  • Preheat your oven to 350°F (175°C) and line a 10×15-inch jelly roll pan with parchment paper.
  • In a medium bowl, whisk together flour, cocoa powder, baking powder, and salt.
  • In a separate large bowl, beat eggs and sugar until thick and pale. Add vanilla and milk, mixing gently.
  • Fold the dry ingredients into the wet mixture until smooth, then pour the batter into the prepared pan.
  • Bake for 10-12 minutes, until the cake springs back when touched.
  • While warm, turn the cake onto a clean kitchen towel dusted with powdered sugar. Roll the cake with the towel inside and let it cool.
  • To make the filling, beat peanut butter, butter, powdered sugar, and heavy cream until fluffy.
  • Unroll the cooled cake, spread the peanut butter filling evenly, and roll the cake back up tightly.
  • Top with chopped Reese’s Peanut Butter Cups and drizzle with chocolate ganache if desired.
