- 2 catfish fillets (about 1 lb/450g total)
- 1/2 lb (225g) large shrimp, peeled and deveined
- 2 tbsp olive oil
- 2 tbsp Cajun seasoning
- 1 tsp paprika
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- Salt and pepper, to taste
- 4 tbsp butter, melted
- 1 tbsp lemon juice
- 1 tbsp fresh parsley, chopped
- Lemon wedges (for serving)
Instructions
- Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
- Pat catfish fillets and shrimp dry with paper towels. Brush both sides with olive oil.
- In a small bowl, mix Cajun seasoning, paprika, garlic powder, onion powder, salt, and pepper. Rub this spice mixture over the catfish and shrimp.
- Place the seasoned seafood on the prepared baking sheet. Bake for 15-20 minutes, until the fish flakes easily with a fork and the shrimp are fully cooked.
- While the seafood is baking, combine melted butter with lemon juice and fresh parsley in a small bowl.
- Drizzle the zesty lemon butter over the baked catfish and shrimp once out of the oven. Serve hot with lemon wedges on the side.
Notes
- To keep the shrimp from overcooking, you can add them to the oven 5 minutes after the catfish starts baking.
- This dish is perfect with a side of steamed vegetables or rice.
- For extra heat, sprinkle in a bit more Cajun seasoning or cayenne pepper.
