  • 1 lb large shrimp, peeled and deveined
  • 3 tbsp olive oil
  • 3 garlic cloves, minced
  • Zest and juice of 1 lemon
  • 1 tsp dried oregano
  • 1/2 tsp paprika
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)
  • Lemon wedges (for serving)

Instructions

  • In a large bowl, whisk together olive oil, minced garlic, lemon zest, lemon juice, oregano, paprika, salt, and pepper.
  • Add the shrimp to the bowl and toss to coat evenly. Marinate for 15-30 minutes, but no longer to avoid overcooking.
  • Preheat your grill or grill pan to medium-high heat. Thread the shrimp onto skewers, about 4-5 shrimp per skewer.
  • Grill the shrimp kabobs for 2-3 minutes per side, or until the shrimp turn pink and opaque.
  • Garnish with fresh parsley and serve with lemon wedges.

Notes

  • Don’t marinate the shrimp for more than 30 minutes, as the lemon juice can start to “cook” the shrimp.
  • If using bamboo skewers, soak them in water for at least 15 minutes before grilling to prevent burning.
