Ingredients
Scale
- 12 large shrimp, peeled and deveined
- 8 oz spicy chicken sausage, sliced
- 8 oz penne pasta
- 2 tbsp olive oil
- 1 tbsp Cajun seasoning
- 1 cup heavy cream
- 1/2 cup chicken broth
- 1/2 cup Parmesan cheese, grated
- 1 red bell pepper, sliced
- 1 small onion, chopped
- 2 cloves garlic, minced
- Fresh parsley, for garnish
Instructions
- Cook the penne pasta according to package instructions, drain, and set aside.
- In a large skillet, heat 2 tbsp olive oil over medium-high heat. Add the sliced sausage and cook for 4-5 minutes until browned. Set aside.
- In the same skillet, add the shrimp and season with 1 tbsp Cajun seasoning. Cook for 2-3 minutes per side until pink. Set aside with the sausage.
- In the same pan, sauté the bell pepper, onion, and garlic until softened, about 3-4 minutes.
- Add the heavy cream, chicken broth, and Parmesan cheese to the vegetables. Stir and simmer for 5-7 minutes until the sauce thickens.
- Add the cooked pasta, shrimp, and sausage back to the skillet, tossing everything together to coat in the sauce.
- Garnish with fresh parsley and serve immediately.
Notes
- Adjust the Cajun seasoning to taste for more or less heat.
- For a lighter version, substitute heavy cream with half-and-half or coconut milk.
- Feel free to add extra veggies like spinach or zucchini for added nutrition.
- Leftovers can be stored in an airtight container in the fridge for up to 3 days.
