  • 12 large shrimp, peeled and deveined
  • 8 oz spicy chicken sausage, sliced
  • 8 oz penne pasta
  • 2 tbsp olive oil
  • 1 tbsp Cajun seasoning
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/2 cup Parmesan cheese, grated
  • 1 red bell pepper, sliced
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • Fresh parsley, for garnish

Instructions

  • Cook the penne pasta according to package instructions, drain, and set aside.
  • In a large skillet, heat 2 tbsp olive oil over medium-high heat. Add the sliced sausage and cook for 4-5 minutes until browned. Set aside.
  • In the same skillet, add the shrimp and season with 1 tbsp Cajun seasoning. Cook for 2-3 minutes per side until pink. Set aside with the sausage.
  • In the same pan, sauté the bell pepper, onion, and garlic until softened, about 3-4 minutes.
  • Add the heavy cream, chicken broth, and Parmesan cheese to the vegetables. Stir and simmer for 5-7 minutes until the sauce thickens.
  • Add the cooked pasta, shrimp, and sausage back to the skillet, tossing everything together to coat in the sauce.
  • Garnish with fresh parsley and serve immediately.

Notes

  • Adjust the Cajun seasoning to taste for more or less heat.
  • For a lighter version, substitute heavy cream with half-and-half or coconut milk.
  • Feel free to add extra veggies like spinach or zucchini for added nutrition.
