  • 2 ribeye steaks (about 1 inch thick)
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp garlic powder

For the French Onions & Mushrooms:

  • 2 tbsp butter
  • 1 large onion, thinly sliced
  • 8 oz mushrooms, sliced
  • 2 garlic cloves, minced
  • 1 tsp fresh thyme leaves (or 1/2 tsp dried thyme)
  • 1/4 cup beef broth
  • 1/4 cup white wine (optional)
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  • Rub steaks with olive oil, salt, pepper, and garlic powder. Let sit at room temperature for 10-15 minutes.
  • Heat a cast-iron skillet over medium-high heat. Cook steaks for 3-4 minutes per side for medium-rare. Remove from skillet and let rest.
  • In the same skillet, melt butter over medium heat. Add onions and cook until caramelized, 10-15 minutes.
  • Add mushrooms and garlic. Cook for 5-7 minutes until mushrooms soften. Stir in thyme, beef broth, and white wine (if using). Let simmer until liquid reduces. Season with salt and pepper.
  • Spoon the onion and mushroom mixture over the steaks. Garnish with fresh parsley and serve.

Notes

  • For a more well-done steak, cook 1-2 minutes longer per side.
  • The white wine adds depth, but it can be replaced with extra beef broth if preferred.
  • Serve with mashed potatoes or roasted vegetables for a complete meal.
