Ingredients
Scale
- 4 red snapper fillets
- 2 tbsp olive oil
- Salt and pepper, to taste
- 1 cup heavy cream (or half-and-half)
- 1/2 cup chicken broth
- 1 tbsp Creole seasoning
- 1 tbsp butter
- 1 small onion, finely chopped
- 1 bell pepper, finely chopped
- 2 garlic cloves, minced
- 1 tbsp tomato paste
- 1/2 tsp paprika
- 1/4 tsp cayenne pepper
- 1/4 cup fresh parsley, chopped
- Lemon wedges, for serving
Instructions
- Prep Fish: Season red snapper fillets with salt and pepper. Heat olive oil in a large pan over medium heat. Cook fillets for 3-4 minutes per side, until golden and cooked through. Set aside.
- Sauté Vegetables: In the same pan, melt butter. Add onion, bell pepper, and garlic, sautéing until softened, about 5 minutes.
- Make Sauce: Stir in tomato paste, Creole seasoning, paprika, and cayenne. Add chicken broth and heavy cream. Simmer the sauce for 5-7 minutes until it thickens slightly.
- Combine: Return the red snapper to the pan, spoon the creamy Creole sauce over the fillets, and cook for 2-3 more minutes.
- Serve: Garnish with fresh parsley and serve with lemon wedges.
Notes
- For a lighter version, swap out heavy cream for half-and-half or coconut milk for a dairy-free option.
- Adjust the heat level by reducing or omitting the cayenne pepper.
- Serve this dish with steamed rice, grilled vegetables, or crusty bread to soak up the delicious sauce!
