Instructions
1. Prepare the Lamb Chops:
- Rub the lamb chops with olive oil, garlic, rosemary, thyme, salt, and pepper.
- Heat a skillet over medium-high heat and sear the lamb chops for 3-4 minutes per side for medium-rare. Adjust time based on preferred doneness.
- Remove from heat and let rest for 5 minutes.
2. Make the Lobster Mash:
- Boil the potatoes in salted water for about 15 minutes, until tender.
- Drain and mash the potatoes with butter and heavy cream until smooth.
- Fold in the lobster meat, seasoning with salt and pepper.
3. Roast the Asparagus:
- Toss the asparagus in olive oil, salt, and pepper.
- Roast in a 400Β°F (200Β°C) oven for 10-12 minutes, until tender.
4. Assemble the Plate:
- Serve the lamb chops over a bed of lobster mash and arrange the roasted asparagus on the side.
