  • 1 lb Italian sausage (or chicken/turkey sausage)
  • 2 tbsp olive oil
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 large onion, sliced
  • 3 cloves garlic, minced
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 1/4 tsp red pepper flakes (optional)
  • Salt and pepper to taste
  • 1/4 cup chicken broth
  • Fresh parsley, chopped (for garnish)
  • Hoagie rolls or Italian bread (optional for serving)

Instructions

  • Heat 1 tbsp of olive oil in a large skillet over medium heat. Add the sausages and cook until browned on all sides, about 7-8 minutes. Remove and set aside.
  • In the same skillet, add the remaining olive oil. Sauté the sliced bell peppers, onions, and garlic until softened, about 5-7 minutes.
  • Stir in oregano, basil, red pepper flakes, salt, and pepper. Cook for another 2-3 minutes to let the flavors meld.
  • Return the sausages to the skillet, add the chicken broth, and cover. Simmer for 10 minutes until sausages are cooked through.
  • Garnish with fresh parsley and serve as is or in hoagie rolls or Italian bread.

  • For extra flavor, add a splash of balsamic vinegar towards the end of cooking.
