- 2 tbsp olive oil
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 green bell pepper, sliced
- 1 large onion, sliced
- 3 cloves garlic, minced
- 1 tsp dried oregano
- 1 tsp dried basil
- 1/4 tsp red pepper flakes (optional)
- Salt and pepper to taste
- 1/4 cup chicken broth
- Fresh parsley, chopped (for garnish)
- Hoagie rolls or Italian bread (optional for serving)
Instructions
- Heat 1 tbsp of olive oil in a large skillet over medium heat. Add the sausages and cook until browned on all sides, about 7-8 minutes. Remove and set aside.
- In the same skillet, add the remaining olive oil. Sauté the sliced bell peppers, onions, and garlic until softened, about 5-7 minutes.
- Stir in oregano, basil, red pepper flakes, salt, and pepper. Cook for another 2-3 minutes to let the flavors meld.
- Return the sausages to the skillet, add the chicken broth, and cover. Simmer for 10 minutes until sausages are cooked through.
- Garnish with fresh parsley and serve as is or in hoagie rolls or Italian bread.
